Preparing the Garlic

    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the tops off the garlic bulbs to expose the cloves slightly. Drizzle with 1 tablespoon of EVOO and sprinkle with a pinch of salt. Wrap each bulb in aluminum foil and roast in the oven for about 30-35 minutes, until soft and caramelized.

Cooking the Steak

    Prepare the Steak

    While the garlic is roasting, take the NY strip steaks out of the refrigerator and let them sit at room temperature for about 15-20 minutes. This helps them cook more evenly.

    Season the Steak

    Rub both sides of the steaks with 2 tablespoons of EVOO, then generously season with salt and black pepper.

    Cook the Steak

    Heat a grill or cast-iron skillet over high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let rest for 5 minutes before slicing.

Assembling the Dish

    Prepare the Toppings

    Once the garlic is roasted, squeeze the soft cloves out of their skins into a bowl and mash them with a fork. Set aside.

    Assemble the Bistecca

    Slice the cooked steak against the grain. On each plate, place a serving of sliced steak, then spread the roasted garlic over the top. Add slices of mozzarella cheese and a handful of arugula. Drizzle with balsamic vinegar just before serving.
