Steak Preparation

    Season the Steak

    Pat the NY strip steak dry with paper towels and season both sides generously with salt and black pepper.

    Cook the Steak

    Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the seasoned steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Vegetable Sauté

    Sauté the Mushrooms

    In the same skillet, add another tablespoon of olive oil. Add the sliced mushrooms and sauté for about 3-4 minutes until they are golden brown.

    Add Spinach

    Add the fresh spinach to the skillet with mushrooms and cook until wilted, about 2 minutes. Remove from heat.

Aioli Preparation

    Make the Aioli

    In a small bowl, combine mayonnaise, steak sauce, minced garlic, and lemon juice. Mix well until fully combined.

Sandwich Assembly

    Slice the Steak

    After the steak has rested, slice it thinly against the grain.

    Assemble the Sandwich

    On the sub rolls or ciabatta bread, spread a generous amount of steak sauce aioli. Layer the sliced steak, sautéed mushrooms, wilted spinach, and top with provolone cheese. Close the sandwich.

    Optional Grilling

    If desired, grill the assembled sandwich in a panini press or skillet for 2-3 minutes until the cheese is melted and the bread is toasted.
