Preparation Instructions

  1. 1

    Prepare the Olives

In a mixing bowl, combine the green and black olives. Make sure they are pitted to enhance the flavor absorption during marination.

  2. 2

    Add Aromatics

Peel and lightly crush the garlic cloves with the flat side of a knife. Add them to the bowl with the olives. Add the fresh rosemary and thyme by stripping the leaves from the stems.

  3. 3

    Spice it Up

Sprinkle in the red chili flakes for heat and add the salt and black peppercorns to the olive mixture.

  4. 4

    Make the Marinade

In a separate bowl, whisk together the olive oil, lemon zest, and red wine vinegar until well combined.

  5. 5

    Combine and Marinate

Pour the marinade over the olive mixture. Gently toss everything together until the olives are well coated with the marinade.

  6. 6

    Chill

Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Let the olives marinate in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to meld.

  7. 7

    Serve

Remove the olives from the refrigerator and serve at room temperature as an appetizer or snack.
