Dough Preparation

Activate Yeast
In a small bowl, mix warm water and sugar. Sprinkle the yeast over the water and let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Knead the Dough
Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

Let it Rise
Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Assembling the Pizza

Preheat Oven
Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

Shape the Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a 12-inch circle.

Add Toppings
Transfer the rolled-out dough to a piece of parchment paper. Tear the mozzarella into pieces and evenly distribute over the dough. Slice the tomatoes and arrange them on top. Drizzle with olive oil, and season with salt and black pepper.

Bake the Pizza
Carefully slide the pizza (with the parchment paper) onto the hot pizza stone or baking sheet. Bake for 10-12 minutes until the crust is golden and the cheese is bubbling.

Add Basil
Remove the pizza from the oven, and immediately top with fresh basil leaves. Let it cool slightly before slicing.
