Pasta

Method

Cooking the Pasta

  1. 1

    Boil Water

In a large pot, bring water to a boil. Once boiling, add salt.

  2. 2

    Cook Linguini

Add the linguini to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

  3. 3

    Drain Pasta

Once cooked, reserve 1 cup of the pasta water and drain the rest. Set aside.

Preparing the Clam Sauce

  1. 4

    Sauté Garlic

In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant.

  2. 5

    Add Clams

Add the fresh clams to the skillet and stir to coat with the garlic and oil mixture.

  3. 6

    Deglaze with Wine

Pour in the white wine and cover the skillet with a lid. Allow the clams to steam for about 5-7 minutes, or until they have opened.

  4. 7

    Finish the Sauce

Once the clams are cooked, remove the lid and add chopped parsley, lemon juice, and black pepper to taste. Stir to combine.

Combining Pasta and Sauce

  1. 8

    Combine

Add the drained linguini to the skillet with the clam sauce. Toss gently to combine, adding reserved pasta water a little at a time until the desired sauce consistency is reached.

  2. 9

    Serve

Divide the linguini and clam sauce among plates and garnish with additional parsley if desired. Serve immediately.
