Sausage and Peppers

    Cook the Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage links and cook until browned on all sides, about 10-12 minutes. Remove from skillet and set aside.

    Sauté the Peppers and Onions

    In the same skillet, add another tablespoon of olive oil. Add sliced onions and cook for about 2 minutes. Then, add the bell peppers and sauté until softened, about 5-7 minutes. Season with salt and black pepper.

    Combine and Finish

    Slice the cooked sausage and return it to the skillet with the peppers and onions. Stir to combine and heat through for an additional 2-3 minutes.

Rocco's Sauce

    Prepare the Sauce

    In a small saucepan, combine tomato sauce, minced garlic, oregano, basil, and red pepper flakes. Simmer over low heat for about 10 minutes. Season with salt to taste.

Garlic Rapini (optional)

    Cook the Garlic Rapini

    In a separate pot, bring salted water to a boil. Add the rapini and cook for about 3 minutes until tender. Drain and set aside.

    Sauté with Garlic

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the cooked rapini and toss to combine. Season with salt to taste.
