Preparation

  1. 1

    Prepare the Spinach

Wash the fresh spinach under cold water and chop it roughly. Set aside.

  2. 2

    Sauté Vegetables

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.

Mixing

  1. 3

    Combine Dry Ingredients

In a large mixing bowl, combine the flour, baking powder, salt, black pepper, dried oregano, and dried basil. Mix well.

  2. 4

    Mix Wet Ingredients

In a separate bowl, whisk together the eggs, milk, and the remaining tablespoon of olive oil until well combined.

  3. 5

    Combine All Ingredients

Add the sautéed spinach, onion, and garlic to the wet mixture. Stir to combine. Then, add this mixture to the dry ingredients. Fold in the grated Parmesan and feta cheese until just combined.

Baking

  1. 6

    Preheat Oven

Preheat your oven to 350°F (175°C). Grease a loaf pan with cooking spray or olive oil.

  2. 7

    Bake the Loaf

Pour the batter into the greased loaf pan and spread it evenly. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Serving

  1. 8

    Cool and Serve

Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature.
