    Slice the eggplant into 1/2 inch thick rounds. Sprinkle salt on both sides and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes, oregano, basil, black pepper, and sugar. Simmer for 20 minutes, stirring occasionally.

Breading and Frying

    Bread the Eggplant

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and another with bread crumbs. Dredge each eggplant slice in flour, dip in eggs, and coat with bread crumbs.

    In a large skillet, heat olive oil over medium-high heat. Fry the breaded eggplant slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
