Chicken Cutlets

Serving

Method

Preparation

  1. 1

    Prepare Chicken

Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to about 1/2 inch thickness.

  2. 2

    Set Up Breading Station

Place the flour in a shallow dish. In another dish, beat the eggs. In a third dish, mix the breadcrumbs, grated Parmesan cheese, salt, and black pepper.

Breading and Cooking

  1. 3

    Bread the Chicken

Dredge each chicken breast in the flour, shaking off the excess. Dip into the beaten eggs, allowing any excess to drip off. Finally, coat with the breadcrumb mixture, pressing lightly to adhere.

  2. 4

    Heat Oil

In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

  3. 5

    Cook Chicken Cutlets

Add the breaded chicken cutlets to the skillet in batches, ensuring not to overcrowd the pan. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Serving

  1. 6

    Garnish and Serve

Arrange the chicken cutlets on a serving platter. Garnish with chopped parsley and serve with lemon wedges on the side.
