Preparation of Beef

    Season the Beef

    Rub the sirloin beef roast with kosher salt and black pepper evenly on all sides.

    Sear the Beef

    In a large skillet, heat olive oil over medium-high heat. Sear the seasoned beef roast on all sides until browned, about 3-4 minutes per side.

    Roast the Beef

    Transfer the seared beef to a roasting pan and place it in a preheated oven at 350°F (175°C). Roast for approximately 25-30 minutes per pound for medium-rare, or until a meat thermometer reads 135°F (57°C).

Preparation of Au Jus

    In the same skillet used to sear the beef, add diced onion and minced garlic. Sauté over medium heat until the onion becomes translucent, about 5 minutes.

    Deglaze the Skillet

    Pour in the red wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to reduce by half, about 5-7 minutes.

    Add Broth and Herbs

    Add the beef broth, chopped rosemary, and chopped thyme to the skillet. Bring to a simmer and cook for 10 minutes to meld the flavors.

    Once the beef is done roasting, remove it from the oven and let it rest for at least 15 minutes before carving.
