Preparation of Ingredients

Prepare the Mozzarella
If using house-made mozzarella, slice it into rounds about 1/2 inch thick. If using store-bought, you can do the same.

Slice the Tomatoes
Wash the ripe tomatoes and slice them into rounds that are similar in thickness to the mozzarella.

Prepare the Onion
Peel the red onion and slice it thinly into rings or half-moons, depending on your preference.

Wash the Basil
Rinse the fresh basil leaves under cold water and pat them dry with a paper towel.
Assembly

Layer the Ingredients
On a serving platter, alternate layers of mozzarella, tomato, and onion. Start with a slice of mozzarella, then a slice of tomato, followed by a few rings of onion, and repeat until all ingredients are used.

Add the Basil
Tuck fresh basil leaves in between the layers of mozzarella and tomatoes for added flavor and presentation.

Drizzle with EVOO and Balsamic
Drizzle the extra virgin olive oil over the assembled Caprese. Follow with a drizzle of aged balsamic vinegar for a touch of sweetness.

Season to Taste
Sprinkle with salt and freshly cracked black pepper to taste. Allow to sit for a few minutes for flavors to meld before serving.
