Making the Cannoli Shells

Prepare the Dough
In a large bowl, combine flour, sugar, cocoa powder, and salt. Mix well. Add in the butter and mix until crumbly. Stir in the egg white, white wine (or vinegar), and water until a dough forms.

Knead the Dough
Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll and Cut the Dough
After resting, roll out the dough to about 1/8-inch thickness. Cut into circles about 4 inches in diameter.

Shape the Shells
Wrap each circle around a metal cannoli tube, sealing the edges with a bit of water. Make sure they are tightly secured.

Fry the Shells
Heat vegetable oil in a deep pot to 350°F (175°C). Fry each shell until golden brown, about 2-3 minutes, turning occasionally. Remove and let cool on paper towels.

Mix the Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Fold in Chocolate and Nuts
Gently fold in the chocolate chips and chopped pistachios until evenly distributed.
Assembling the Cannoli

Fill the Shells
Using a piping bag, fill each cooled cannoli shell with the ricotta filling, making sure to fill both ends.

Garnish
Dust the filled cannoli with powdered sugar and sprinkle with additional chopped pistachios if desired.
