Meat Filling

For Cooking

Method

Preparing the Filling

  1. 1

    Prepare the Meat

Lay the flank steak flat on a cutting board. Using a meat mallet, pound the steak to about 1/2 inch thickness.

  2. 2

    Make the Filling

In a bowl, combine minced garlic, chopped parsley, grated Parmesan cheese, Italian breadcrumbs, salt, black pepper, and red pepper flakes. Mix well.

  3. 3

    Fill the Meat

Spread the filling mixture evenly over the flattened flank steak, leaving a small border around the edges. Roll the steak tightly from one end to the other.

  4. 4

    Secure the Braciole

Tie the rolled steak with kitchen twine at 1-inch intervals to secure the filling inside.

Cooking the Braciole

  1. 5

    Sear the Braciole

In a large skillet, heat olive oil over medium-high heat. Once hot, add the braciole and sear on all sides until browned, about 3-4 minutes per side.

  2. 6

    Prepare the Sauce

In the same skillet, add crushed tomatoes, dried oregano, dried basil, and bay leaves. Stir to combine with the drippings from searing the meat.

  3. 7

    Simmer

Add the red wine to the skillet and bring the sauce to a simmer. Reduce heat to low, cover, and cook for about 1.5 to 2 hours until the meat is tender.

  4. 8

    Serve

Remove the braciole from the sauce, discard the kitchen twine, and slice the braciole into rounds. Serve with the sauce spooned over the top.
