Shrimp Fritti Directions

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well.

    Add Water

    Slowly whisk in the ice-cold water until the batter is smooth and free of lumps. The batter should be thick enough to coat the shrimp.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil to 180°C (350°F).

    Fry the Shrimp

    Dip each shrimp into the batter, allowing excess to drip off before carefully placing them into the hot oil. Fry in batches for about 3-4 minutes, or until golden brown and crispy.

    Drain and Serve

    Using a slotted spoon, remove the fried shrimp and place them on paper towels to drain excess oil. Keep warm until ready to serve.

    Cook the Shallots

    In a saucepan over medium heat, add the finely chopped shallots and white wine. Reduce until the wine is almost fully evaporated.

    Add Cream and Herbs

    Once the wine has reduced, stir in the heavy cream and allow to simmer for a minute. Gradually whisk in the chilled butter, one cube at a time, until the sauce is thick and emulsified.

    Season the Sauce

    Add the chopped fines herbes, salt, and white pepper. Stir well to combine and keep warm until ready to serve.

    Assemble the Dish

    Plate the crispy shrimp fritti, drizzling the fines herbes beurre blanc over the top. Garnish with thinly sliced speck ham.
