Method

Preparation

  1. 1

    Prepare the Pork

Cut the sakura collar pork into small, bite-sized cubes, approximately 2.5 cm each.

  2. 2

    Make the Marinade

In a large mixing bowl, combine the marsala wine, olive oil, minced garlic cloves, salt, and black pepper. Stir well to mix all ingredients.

  3. 3

    Marinate the Pork

Add the cubed pork to the marinade. Ensure that all pieces are well coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 1 hour (or up to overnight for better flavor).

Cooking

  1. 4

    Skewer the Pork

Preheat your grill or broiler. Thread the marinated pork cubes onto skewers, leaving a little space between each piece for even cooking.

  2. 5

    Grill the Skewers

Place the skewers on the grill or under the broiler. Cook for about 10-12 minutes, turning occasionally, until the pork is cooked through and has a nice char on the outside.

Serving

  1. 6

    Garnish the Dish

Finely chop the chives and sprinkle them over the grilled pork arrosticini just before serving for a fresh touch.

  2. 7

    Serve

Serve the pork arrosticini hot, with your choice of sides such as grilled vegetables or a fresh salad.
