For the Calamari

    Prepare the Calamari

    Rinse the cleaned calamari rings under cold water and pat them dry with paper towels. Ensure they are as dry as possible to achieve a crispy coating.

    Mix the Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to create a uniform dry coating.

    Prepare the Egg Wash

    In another bowl, beat the eggs until well combined. This will be used to coat the calamari before dredging it in the flour mixture.

    Heat the Oil

    In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Dredge the Calamari

    Dip each calamari ring into the egg wash, allowing any excess to drip off, then dredge it in the dry flour mixture. Shake off the excess flour.

    Fry the Calamari

    Carefully place the coated calamari in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and drain on paper towels.

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

    Pour in the crushed tomatoes, oregano, salt, and black pepper. Stir well to combine all ingredients.

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. If desired, stir in the chopped fresh basil just before serving for added flavor.
