Preparation
1. Prepare the Tuna
Using a sharp knife, cut the Bluefin Tuna into thin slices, approximately 1/4 inch thick. Arrange the slices on a serving plate.
2. Prepare the Celeriac
Peel and julienne the celeriac into thin matchsticks. This can be done with a mandoline or a sharp knife. Set aside in a bowl of cold water to keep it crisp.
3. Prepare the Green Apple
Core and slice the green apple into thin wedges or matchsticks, similar in size to the celeriac. Toss with a few drops of lemon juice to prevent browning.
4. Make the Horseradish Mix
In a small bowl, mix the horseradish with a pinch of sea salt and black pepper. Adjust seasoning to taste.
Assembly
5. Combine and Serve
Layer the julienned celeriac and green apple on top of the sliced tuna. Drizzle the tonnato sauce over the top and add small dollops of the horseradish mix. Garnish with freshly chopped chives and additional sea salt and black pepper to taste.
