Prepare fruit

Peel, pit and roughly chop the peaches and mango. Measure approximately 1 cup of each packed. Use ripe, fragrant fruit for best flavor.

Make purée

Place the chopped peach and mango in a blender or food processor with the granulated sugar and lemon juice. Blend until smooth. If the purée is very thick, add up to 1 tablespoon water and pulse to reach a thick but pourable consistency.

Taste and adjust

Taste the purée and adjust sweetness with an additional 1/2 tablespoon sugar if needed, or a few drops more lemon juice if too sweet. Chill the purée in the refrigerator for at least 15 minutes if not using immediately.

Chill glassware and sparkling wine

Ensure champagne or sparkling wine is well chilled (ideally 45–50°F / 7–10°C). Chill flutes or a pitcher in the fridge for 10–15 minutes to keep the beverage frosty.

Single-serve mimosa

Add 1 to 1 1/2 tablespoons of peach-mango purée into each chilled champagne flute. If you prefer a lighter fruit flavor, use 1 tablespoon; for a fruitier drink, use up to 1 1/2 tablespoons.

Add sparkling wine

Slowly pour about 4 to 5 ounces (120–150 ml) of chilled champagne or sparkling wine into each flute over the back of a spoon or down the side to minimize foaming. The purée will gently swirl into the bubbles creating a cloudy, fruity mimosa.

Optional orange juice addition

If you’d like a slightly fuller mimosa, add 1 ounce (30 ml) chilled orange juice to the flute before or after the sparkling wine. Stir gently once with a bar spoon to incorporate—avoid vigorous stirring to preserve bubbles.

Garnish and serve

Garnish each flute with a thin peach or mango slice on the rim or float a small slice on top. Serve immediately so the bubbles remain lively.

Pitcher method (serves 6)

For a pitcher, combine 6 to 8 tablespoons (3/4 to 1/2 cup) fruit purée and 1 cup chilled orange juice (optional) in a chilled pitcher. Add ice if desired. Slowly pour in the entire 750 ml bottle of chilled sparkling wine and stir gently once to combine. Pour into glasses and garnish as above.
