Cocktail base

3 oz Long Island mix (pre-mixed or equal parts vodka, gin, white rum, tequila, triple sec)1 oz Peach schnapps

Mixers & modifiers

1/2 oz Fresh lime juice4 oz Pepsi (or cola)

Garnish & service

1 to taste Ice (cubed)1 piece Lime wheel or wedge1 piece Peach slice (optional)

Method

Build & mix

Prepare glass

Fill a highball or collins glass with ice cubes until nearly full (about 3/4 full).

Add spirits

Pour 3 oz Long Island mix over the ice, followed by 1 oz peach schnapps.

Add lime juice

Add 0.5 oz (about half an ounce) of fresh lime juice to brighten the drink.

Top with cola

Top the glass with approximately 4 oz Pepsi (or enough to fill the glass to about 1/2 inch below the rim). Stir gently once or twice to combine, taking care not to over-dilute.

Finish & garnish

Garnish the drink with a lime wheel or wedge on the rim and an optional peach slice dropped into the glass or skewered. Serve immediately with a straw or stirrer.
