Make lemon simple syrup

In a small saucepan combine 1 cup cold water and 3 tablespoons granulated sugar. Warm over low heat just until sugar dissolves (do not boil). Remove from heat and let cool to room temperature. This creates a lightly sweetened syrup that blends with dairy better than dry sugar.

In a pitcher, combine 1 cup fresh lemon juice and the cooled sugar syrup. Add 3 cups cold water and stir to combine. Taste and adjust: if too tart, add up to the optional 2 tablespoons simple syrup (from ingredients) or more cooled syrup; if too weak, add more lemon juice.

Add 2 cups ice cubes to the pitcher to chill the lemonade while you prepare the cookies n' cream component.

Reserve 6 whole cookies for garnish. Place remaining 12 cookies in a food processor or blender and pulse until coarse crumbs and small chunks remain (about 8–10 pulses). You want a mix of fine crumbs and small cookie pieces to provide texture.

In a bowl or measuring cup combine 1 cup half-and-half and 1 teaspoon vanilla extract. Add the processed cookie crumbs to the cream and stir gently. Let sit 3–5 minutes so crumbs soften and flavors meld. If you prefer smoother texture, briefly pulse the cream and crumbs once more (5–6 short pulses); if you want pronounced cookie pieces, skip the second pulse.

Taste the cookies-and-cream mixture. If it's not sweet enough to your taste after mixing with the lemonade, stir in up to 2 tablespoons optional simple syrup. Remember the lemonade base already contains sweetness.

Assemble & Garnish

If using chocolate syrup for presentation, drizzle about 1 teaspoon chocolate syrup inside each serving glass in a vertical zigzag pattern (optional).

Pour about 3/4 cup of the chilled lemonade into each glass (for 6 servings this is approximate). Then spoon or pour about 2 to 3 tablespoons of the cookies-and-cream mixture into each glass, allowing cookie bits to float and sink slightly. Gently stir once or twice to swirl the cream into the lemonade—do not overmix or you will fully homogenize the drink; you want ribbons of creamy cookies n' cream throughout.

Top each glass with a dollop of whipped cream (about 2–3 tablespoons each). Sprinkle a little of the 1/4 cup crushed cookie crumbs over the whipped cream. Garnish with a reserved whole cookie on the rim and a lemon slice if desired.

Serve immediately with a straw and a long spoon so drinkers can mix and scoop cookie pieces as they drink.
