Chill glass

If possible, chill a large wine glass in the freezer for 5–10 minutes or fill it with ice and let sit while assembling ingredients. Discard the ice before building if you used it to chill the glass.

Add ice

Fill the chilled wine glass generously with fresh ice cubes to just below the rim. Plenty of ice keeps the drink cold and preserves the bubbles.

Measure and pour Aperol

Pour 3 tablespoons (about 1.5 oz) of Aperol over the ice. This provides the characteristic bitter-orange base of the spritz.

Add Prosecco

Carefully pour 3 oz of chilled Prosecco (or other dry sparkling wine) into the glass. Pour slowly to retain some effervescence.

Add zero-proof orange liqueur

Add 1 oz of the chilled zero-proof orange liqueur to boost orange aroma and sweetness without additional alcohol.

Top with soda

Gently top the mixture with about 1 oz of chilled soda water. Pour slowly over the back of a spoon or down the glass edge to preserve bubbles and create a light layered effect.

Stir gently

Using a long bar spoon, give the drink 2–3 gentle turns to integrate the ingredients without removing much carbonation.

Garnish and serve

Slide one fresh orange slice onto the glass rim or float it in the drink. Serve immediately with a short straw if desired.
