Method

Prepare the Seafood

  1. 1

    Tuna Tartare Preparation

Dice the albacore tuna into small cubes, season with salt, pepper, and a dash of smoked paprika. Set aside in the refrigerator.

  2. 2

    Prepare the Smoked Salmon

Slice the smoked salmon into thin strips and arrange it aesthetically on a serving platter.

  3. 3

    Umami Bomb Squid

In a pan, heat a little oil over medium heat. Add the sliced squid and season with salt, pepper, and smoked paprika. Sauté until just cooked through, about 2-3 minutes. Remove from heat.

Prepare the Chips and Vegetables

  1. 4

    Season the Chips

In a bowl, toss the potato chips with charcoal powder and a pinch of salt. Arrange them on the same platter as the seafood.

  2. 5

    Pickled Vegetables

Arrange the pickled vegetables in a small bowl or on the platter to accompany the seafood.

    Final Assembly

On a large serving platter, artfully arrange the tuna tartare, smoked salmon, sautéed squid, pickled vegetables, and charcoal-spiced chips. Drizzle fermented hot sauce over the top for an extra kick.
