Burger Preparation

Prepare the Burger Patties
In a bowl, mix the ground beef with salt and black pepper. Form into two equal-sized patties.

Oven Dried Tomato Aioli Preparation

Make the Aioli
In a blender, combine mayonnaise, oven-dried tomatoes, garlic, lemon juice, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.
Charcoal Fries Preparation

Prepare the Fries
Preheat the oven to 425°F (220°C). Cut the potatoes into fries and rinse them under cold water. Pat dry.

Season and Bake
Toss the fries with olive oil and charcoal seasoning. Spread them on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy and golden.
Assemble the Burger

On the bottom half of the toasted brioche bun, place the lettuce, followed by the cooked patty with melted smokehouse cheddar, pickled onions, and a generous dollop of the oven-dried tomato aioli. Top with the other half of the bun.
