Pasta

Pork Belly

Method

Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving some pasta water.

  2. 2

    Prepare the Pork Belly

In a skillet over medium heat, add the pork belly. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat and chop into small pieces.

Combine

  1. 3

    Make the Sauce

In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream, stirring to combine, and let it simmer for 2-3 minutes.

  2. 4

    Add Cheese and Season

Stir in the grated parmesan cheese until melted and smooth. Add black pepper and adjust seasoning as needed. If the sauce is too thick, add a bit of reserved pasta water.

  3. 5

    Combine Everything

Add the cooked spaghetti and crispy pork belly to the sauce. Toss to coat everything evenly. Finally, stir in chopped chives.

Serve

  1. 6

    Plate the Dish

Serve immediately in bowls and garnish with additional parmesan cheese and fresh black pepper if desired.
