    Prepare the Polenta

    In a large pot, bring the water and salt to a boil. Slowly whisk in the polenta and cornmeal, stirring constantly to avoid lumps. Cook for about 5-7 minutes until thickened.

    Spread and Chill

    Once thickened, pour the polenta into a greased baking dish, smoothing it out evenly. Allow it to cool at room temperature for at least 30 minutes or until set.

    Cut and Bake

    Preheat the oven to 425°F (220°C). Once the polenta is set, cut it into fries or sticks. Arrange them on a baking sheet, drizzle with olive oil, and sprinkle with parmesan cheese if using. Bake for 25-30 minutes until golden and crispy, flipping halfway through.

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and pepper. Add the oven-dried tomatoes and stir until well combined.
