    Zest the Lemons

    Using a microplane or zester, remove the yellow zest from the lemons, being careful not to include the white pith. Place the zest in a large glass jar.

    Add Vodka

    Pour the vodka over the lemon zest in the jar. Seal the jar tightly and let it sit in a cool, dark place for about 7 to 10 days, shaking it gently every couple of days.

    Make the Simple Syrup

    In a saucepan, combine the water and granulated sugar. Heat over medium heat while stirring until the sugar completely dissolves. Let it cool.

    Combine and Strain

    After the infusion period, strain the lemon zest from the vodka using a fine mesh strainer or cheesecloth. Combine the infused vodka with the cooled simple syrup in a clean bottle.

    Bottle and Chill

    Seal the bottle and refrigerate the limoncello for at least 24 hours before serving. Limoncello can be stored in the freezer and served chilled.
