Squid and Marinade

Preparation

    Prepare the Chermoula Marinade

    In a bowl, combine olive oil, parsley, cumin, paprika, garlic, lemon juice, salt, and black pepper. Mix until well combined.

    Marinate the Squid

    Add the cleaned and sliced Humboldt squid to the marinade, ensuring all pieces are coated. Let it marinate for at least 30 minutes.

Cooking

    Blister the Tomatoes

    In a skillet over medium heat, add a bit of olive oil. Add the cherry tomatoes and cook until they are blistered and slightly caramelized, about 5-7 minutes. Remove from heat and set aside.

    Grill the Broccoli

    Preheat the grill. Toss the broccoli florets in olive oil, salt, and pepper. Grill for about 5-6 minutes until tender and slightly charred. Remove and set aside.

    Fry the Shallots

    In a frying pan, heat oil over medium heat. Add the thinly sliced shallots and fry until golden brown and crispy. Drain on paper towels.

    Grill the Squid

    Preheat the grill to high heat. Grill the marinated squid for about 2-3 minutes on each side or until cooked through and slightly charred. Remove from heat.

Serving

    On a large platter, arrange the grilled squid, blistered tomatoes, and grilled broccoli. Top with crispy shallots for garnish and serve immediately.
