Method

Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 2 hours or overnight.

  2. 2

    Fry the Chicken

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Remove chicken from the marinade, letting excess drip off. Dredge in flour, shaking off excess. Fry chicken in batches until golden brown and cooked through, about 12-15 minutes. Drain on paper towels.

Bacon and Cheddar Waffles

  1. 3

    Prepare the Waffle Batter

In a bowl, whisk together flour, baking powder, and salt. In another bowl, combine milk, eggs, and melted butter. Mix wet ingredients into dry until just combined. Fold in cheddar cheese and crumbled bacon.

  2. 4

    Cook the Waffles

Preheat waffle iron according to manufacturer's instructions. Pour batter into the preheated waffle iron and cook until golden brown, about 5 minutes.

Charcoal Spuds

  1. 5

    Prepare the Potatoes

Preheat oven to 400°F (200°C). In a bowl, toss small potatoes with olive oil, charcoal seasoning, and salt. Spread on a baking sheet and roast for 25-30 minutes or until tender.

Chicken Gravy

  1. 6

    Make the Gravy

In a saucepan, add chicken drippings and heat over medium heat. Stir in flour to create a roux, cooking for 1-2 minutes. Gradually whisk in chicken broth and bring to a simmer. Season with salt and black pepper.

Tomato Jam

  1. 7

    Prepare the Jam

In a saucepan, combine chopped tomatoes, sugar, vinegar, salt, and black pepper. Cook over medium heat until thickened, about 30-40 minutes. Let cool before serving.
