Method

Prepare the Churro Dough

    Heat the Mixture

    In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.

    Add Flour

    Once boiling, remove from heat and stir in flour until fully incorporated.

    Add Eggs and Cinnamon

    Let the mixture cool for a few minutes, then add eggs one at a time, mixing well after each addition. Stir in ground cinnamon.

Fry the Churros

    Heat Oil

    In a large pot or deep fryer, heat oil to 350°F (175°C).

    Pipe Churros

    Transfer the churro dough to a piping bag fitted with a star tip. Pipe strips of dough into the hot oil, cutting them with scissors.

    Fry Until Golden

    Fry churros until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Coat and Serve

    Mix Cinnamon Sugar

    In a bowl, mix granulated sugar and ground cinnamon.

    Coat Churros

    Roll the fried churros in the cinnamon sugar mixture while they are still warm.

    Prepare Mezcal Chantilly Cream

    In a mixing bowl, whip the heavy cream, powdered sugar, mezcal, and vanilla extract until soft peaks form.

    Serve

    Serve churros with a side of dulce de leche and mezcal chantilly cream for dipping.
