Cook the Potatoes

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt. Cook for about 10-15 minutes, stirring occasionally until they are golden and tender.

Sauté the Vegetables

Add the remaining tablespoon of olive oil to the skillet. Add the chopped onion, bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are soft.

Add the Corned Beef

Stir in the diced corned beef and cook for an additional 5-7 minutes, allowing the mixture to get crispy on the bottom. Stir occasionally to ensure even cooking.

Season and Serve

Season the hash with black pepper to taste. Once everything is nicely combined and crispy, remove from heat and set aside.
