Prepare the Taco Filling

Heat the Oil
In a large skillet, heat the olive oil over medium heat.

Sauté the Vegetables
Add the diced red bell pepper, green bell pepper, onion, and zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.

Add Corn and Beans
Stir in the corn and black beans, mixing well with the sautéed vegetables.

Season the Mixture
Sprinkle in the cumin, chili powder, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes until heated through.
Assemble the Tacos

Warm the Tortillas
In a separate pan, briefly warm the soft tortillas for about 30 seconds on each side until pliable.

Fill the Tacos
Lay each tortilla flat and scoop a generous portion of the veggie filling in the center.

Add Toppings
Sprinkle crumbled fresh cheese, chopped cilantro, and a dollop of sour cream or yogurt on top of the filling. Drizzle with salsa or hot sauce according to your preference.

Fold the tortillas over the filling and serve the tacos immediately while warm.
