Preparation of Steak

Season the Steak
Pat the Angus shell steaks dry with paper towels. Season both sides generously with salt and black pepper.

Sear the Steaks
In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steaks and sear for about 4-5 minutes on each side, or until they reach your desired level of doneness. Remove the steaks from the skillet and set aside to rest.

Deglaze with Brandy
Slowly pour in the brandy, scraping the bottom of the skillet to release any browned bits. Let it simmer for about 3-4 minutes until slightly reduced.

Prepare the Sides

Heat the Corn and Beans
In a separate saucepan, add the corn kernels and black beans. Heat over medium heat until warmed through, about 5-7 minutes.

Serve with Rice
Prepare the cooked rice on the plates. Place the corn and black beans next to the rice.
Plating

Plate the Dish
Place the Angus shell steak on top of the rice. Drizzle the brandy sauce over the steak. Garnish with fresh cilantro and serve with lime wedges on the side.
