Method

Steak Preparation

  1. 1

    Season the Steak

In a bowl, combine olive oil, garlic powder, salt, and black pepper. Rub this mixture all over the Angus steak and let it marinate for at least 30 minutes.

  2. 2

    Grill the Steak

Preheat a grill or grill pan over medium-high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from grill and let it rest for 5 minutes before slicing.

Onions and Vegetables Preparation

  1. 3

    Prepare the Onions

Slice the onions into thin rings. In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are soft and translucent, about 5-7 minutes.

  2. 4

    Cook the Corn and Asparagus

Add the corn and asparagus to the skillet with onions. Cook for an additional 5-7 minutes until the vegetables are tender yet crisp. Season with salt and pepper to taste.

Rice and Beans Preparation

  1. 5

    Cook the Rice

In a saucepan, combine the white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is tender and the water is absorbed.

  2. 6

    Heat the Beans

In a small pot, heat the black beans on medium heat until warm. Season with salt and pepper to taste.

Plating

  1. 7

    Assemble the Dish

On a large plate, place a serving of rice on one side, the heated black beans on the other, and arrange the grilled steak slices in the center. Top the steak with the sautéed onions, corn, and asparagus mixture.

  2. 8

    Serve

Enjoy the steak encebollado warm, garnished with fresh herbs if desired.
