    Prepare the Batter

    In a bowl, whisk together the flour and salt. In another bowl, beat the eggs. Mix the milk and melted butter into the eggs. Gradually add the wet ingredients to the dry ingredients, stirring until smooth.

    Cook the Crepes

    Heat a non-stick skillet over medium heat. Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom. Cook for about 2 minutes or until edges turn golden. Flip and cook for another minute. Repeat with the remaining batter.

Shrimp Filling

    Cook the Shrimp

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds. Add shrimp, salt, and pepper. Cook until shrimp turns pink and opaque, about 3-4 minutes.

    Combine Filling

    In a bowl, mix the cooked shrimp with chopped green onions and softened cream cheese until well combined.

Creamy Tomato Sauce

    Make the Sauce

    In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in canned crushed tomatoes, heavy cream, dried basil, salt, and pepper. Simmer for 10 minutes, stirring occasionally.

Assemble and Bake

    Fill the Crepes

    Take a crepe and place a generous amount of shrimp filling in the center. Fold the crepe over the filling and place it in a baking dish. Repeat for all crepes.

    Add Sauce and Cheese

    Pour the creamy tomato sauce over the filled crepes, then sprinkle shredded mozzarella cheese on top.

    Bake

    Preheat the oven to 375°F (190°C). Bake the crepes for about 15-20 minutes, or until the cheese is melted and bubbly.
