    Clean the Shrimp

    Rinse the shrimp under cold running water. Peel and devein the shrimp, removing the shells and the intestinal tract. Cut shrimp into small bite-sized pieces.

    Marinate the Shrimp

    In a bowl, combine the chopped shrimp with the fresh lime juice. Make sure the shrimp are completely submerged in the lime juice to ensure proper marination. Cover and refrigerate for about 30 minutes, or until the shrimp turn opaque and firm.

Mixing the Ceviche

    Chop the Vegetables

    While the shrimp is marinating, finely chop the red onion, tomatoes, cilantro, and serrano chile. If you prefer less heat, remove the seeds from the serrano chile before chopping.

    Combine the Ingredients

    Once the shrimp are marinated, drain some of the excess lime juice if desired. Add the chopped red onion, tomatoes, cilantro, and serrano chile to the shrimp. Season the mixture with salt and black pepper to taste, and gently toss to combine.

    Serve the Ceviche

    Transfer the shrimp ceviche to a serving bowl. Garnish with additional cilantro if desired. Serve chilled with tortilla chips or on its own as an appetizer.
