Method

Prepare the Guajillo Sauce

    Toast the Chiles

    In a dry skillet over medium heat, toast the dried guajillo chiles for 2-3 minutes until fragrant. Remove from heat and soak them in hot water for 15 minutes to soften.

    Blend the Sauce

    In a blender, combine the soaked guajillo chiles (remove stems and seeds), garlic, onion, tomato, vegetable broth, salt, and black pepper. Blend until smooth.

    Cook the Sauce

    In a saucepan, heat olive oil over medium heat. Pour in the blended sauce and simmer for 10-15 minutes until it thickens slightly.

Cook the Seafood

    Sauté the Seafood

    In a large skillet, add the cooked guajillo sauce and bring to a simmer. Add the shrimp, scallops, and octopus. Cook for 5-7 minutes, stirring occasionally, until the seafood is cooked through.

Prepare Veggie and Rice

    Cook the Rice

    In a pot, bring water to a boil. Add the long-grain rice, reduce heat to low, cover, and cook for 15 minutes. Remove from heat and let it sit for 5 minutes.

    Sauté the Vegetables

    In a separate pan, melt butter over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes until tender.

Serve the Dish

    Plate the Dish

    On a plate, serve a portion of the rice topped with sautéed vegetables. Spoon the seafood in guajillo sauce over the rice and veggies. Garnish with fresh cilantro if desired.
