Cheese Mixture Preparation

    Prepare the Cheeses

    Grate the Oaxaca and Monterey Jack cheeses into a large bowl. Add the cream cheese and mix until well combined.

    Soak the Chiles

    Remove the stems from the dried morita chiles and soak them in warm water for about 15 minutes until softened.

    Sauté the Vegetables

    In a skillet over medium heat, add olive oil. Once heated, add chopped onion and minced garlic, sauté until fragrant and translucent.

    Blend the Sauce

    In a blender, combine the soaked chiles, sautéed onion and garlic, and the chopped tomato. Add salt and blend until smooth.

Combining and Cooking

    Melt the Cheese

    In a suitable pot or skillet, combine the cheese mixture and morita sauce. Cook over low heat, stirring frequently until the cheeses melt and the mixture is creamy.

Serving

    Serve the Queso Fundido

    Transfer the queso fundido to a serving dish, garnish with fresh cilantro, and serve immediately with tortilla chips and lime wedges on the side.
