Fish and Marinade

Preparation of Fish

    Marinate the Fish

    In a bowl, combine the lime juice, minced garlic, salt, and black pepper. Add the fish fillets and coat them well with the marinade. Let marinate for at least 15 minutes.

Cooking Tomato Sauce

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until softened.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Prepare Sauce

    Add the canned diced tomatoes, sliced green olives, capers, oregano, cumin, and bay leaves to the skillet. Stir well and let the mixture simmer for 10 minutes.

Cooking Fish

    Cook Fish in Sauce

    Gently place the marinated fish fillets into the tomato sauce. Cover and cook for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.

Cooking Rice

    Prepare Rice

    In a medium saucepan, combine the rice, water, and salt. Bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

Serving

    Plate the Dish

    Serve the fish Veracruz over a bed of rice, spooning some of the tomato sauce over the top. Enjoy your delicious Pescado Veracruz!
