Marinate the Meats
Place the selected meats (beef ribs, pork chops, chicken thighs, and chorizo sausages) in a large resealable bag or a mixing bowl. Pour the marinade over the meats, ensuring they are well coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, preferably overnight for enhanced flavor.

Preheat the Grill
Preheat your grill to medium-high heat (around 200-230°C or 400-450°F) to ensure even cooking.

Grill the Meats
Remove the meats from the marinade and shake off excess. Place them on the grill and cook according to the following timings: beef ribs (8-10 minutes per side), pork chops (5-7 minutes per side), chicken thighs (6-8 minutes per side), and chorizo sausages (4-5 minutes per side). Use a meat thermometer to check for doneness: beef (medium rare at 57°C), pork (145°C), chicken (74°C), and sausage (74°C).

Plate and Garnish
Once grilled to perfection, remove the meats from the grill and let them rest for 5 minutes. Serve on a large platter garnished with fresh cilantro, lime wedges, and sliced red onion.
