Preparation
- 1
Marinate the Meats
In a mixing bowl, combine olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper. Stir well to create a marinade. Cut the flank steak into strips and place it in the marinade. Slice the chorizo and pork belly into manageable pieces. Add them to the marinade and mix thoroughly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.

Prepare the Vegetables
While the meats are marinating, wash and slice the bell pepper, onion, and zucchini into bite-sized pieces. Set aside.
Cooking
- 3
Grill the Meats
Preheat your grill or grill pan over medium-high heat. Once hot, remove the meats from the marinade and place them on the grill. Cook the flank steak for about 4-5 minutes per side for medium-rare, chorizo for about 3-4 minutes until browned, and pork belly for about 5-6 minutes until crispy. Remove the meats from the grill and let them rest for 5 minutes.
