Preparation

    Prepare the Ingredients

    Chop the onion, red bell pepper, and garlic. Slice the chorizo. Clean the clams, mussels, and scallops, and peel and devein the shrimp.

    Soak the Saffron

    In a small bowl, soak the saffron threads in 2 tablespoons of warm water to release their color and flavor.

Cooking

    Sauté the Meats

    In a large paella pan or skillet over medium heat, add the sliced chorizo and chicken thighs. Cook until browned, about 5-7 minutes. Remove and set aside.

    Cook the Vegetables

    In the same pan, add the chopped onion, red bell pepper, and minced garlic. Sauté until softened, about 3-4 minutes.

    Add the Rice and Broth

    Stir in the paella rice, chicken broth, saffron mixture, paprika, salt, and black pepper. Bring to a simmer.

    Add the Seafood and Meats

    Return the cooked chorizo and chicken to the pan. Add the clams, mussels, calamari, scallops, and shrimp. Stir gently to combine.

    Cook the Paella

    Cover the pan with a lid or foil, reduce heat to low, and let cook for about 20-25 minutes, or until the seafood is cooked through and the rice has absorbed the broth.

    Add Peas

    In the last 5 minutes of cooking, add the peas on top of the paella, cover, and finish cooking.

    Let it Rest

    Remove from heat and let the paella rest for 5 minutes before serving.

Serving

    Plate and Garnish

    Serve the paella directly from the pan. Garnish with lemon wedges and chopped parsley.
