Preparation of Tortilla Chips

Cut and Fry Tortillas
Cut each corn tortilla into triangles. Heat the vegetable oil in a large frying pan over medium heat. Once hot, add the tortilla triangles in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Preparation of Refried Beans and Cheese

Heat Refried Beans
In a small saucepan, heat the refried beans over medium heat until warmed through, stirring occasionally to prevent sticking.

Melt Cheese
Once the refried beans are heated, spread them evenly over the fried tortilla chips. Sprinkle the shredded muenster cheese on top of the beans, then place under a broiler for 2-3 minutes, until the cheese is melted and bubbly.

Add Lime and Salt
Squeeze the lime juice over the mixture, add salt to taste, and mix thoroughly.
Assembly and Serving

Assemble Nachos
Once the cheese is melted, remove the nachos from the oven. Top with the pico de gallo and sliced jalapeños.

Serve immediately while hot, with additional jalapeños and lime wedges on the side if desired.
