Burrito Preparation

    Cook the Beef

    In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.

    Add Seasoning

    Stir in the taco seasoning and cook for an additional 2 minutes, adding a splash of water if necessary to help mix.

    Assemble the Burritos

    Lay out a flour tortilla and spread refried beans in the center. Add a portion of the seasoned beef, sprinkle with shredded cheese, and add sour cream and salsa. Fold the sides of the tortilla over the filling and roll up tightly.

    Heat the Burritos

    Place the assembled burritos seam-side down in a skillet over medium heat. Cook until golden and crispy, about 2-3 minutes on each side.

Chile Relleno Preparation

    Prepare the Peppers

    Roast the poblano peppers over an open flame or under a broiler until the skins are charred and blistered. Place them in a plastic bag for 10 minutes to steam, then peel the skins off and remove the seeds.

    Stuff the Peppers

    Stuff each pepper with shredded Monterey Jack cheese. Ensure they are well filled.

    Prepare the Batter

    In a bowl, beat the eggs until fluffy. Gradually add in the flour, salt, and black pepper, mixing until smooth.

    Fry the Rellenos

    Heat oil in a deep skillet over medium-high heat. Dip each stuffed pepper into the egg batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown, about 3-4 minutes on each side.
