Salad Preparation

    Prepare the Romaine Lettuce

    Wash the romaine lettuce under cold water to remove any dirt. Pat dry with a clean towel. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

    Prepare the Carrots

    Peel the carrots and slice them thinly or grate them using a grater. Add the sliced or grated carrots to the salad bowl.

    Prepare the Orange

    Peel the orange and segment it, removing any seeds. Cut the segments into smaller pieces. Add the orange pieces to the salad bowl.

    Prepare the Beets

    If using raw beets, wash them thoroughly and peel the skin. Then, slice the beets thinly. If using pre-cooked beets, simply slice them. Add the sliced beets to the salad bowl.

    Prepare the Onion

    Peel and slice the small onion thinly. If you prefer a milder taste, soak the slices in cold water for 10 minutes before adding them to the salad. Add the onion slices to the salad bowl.

    Prepare the Tomato

    Wash the tomato and cut it into wedges or slices. Add the tomato pieces to the salad bowl.

Citrus Vinaigrette Preparation

    Mix the Vinaigrette

    In a small bowl or jar, combine the olive oil, fresh lemon juice, orange juice, honey, salt, and black pepper. Whisk or shake until all ingredients are well combined and emulsified.

    Dress the Salad

    Drizzle the citrus vinaigrette over the salad ingredients in the bowl. Toss gently to combine, ensuring all the ingredients are evenly coated with the dressing.
