Preparation of Fish

    Marinate the Fish

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and fresh herbs. Mix well. Add the fish fillets to the marinade and let them sit for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

Preparation of Vegetables

    Prepare the Vegetables

    In a bowl, toss the sliced zucchini, bell pepper, and carrot with olive oil, salt, and black pepper. Ensure the vegetables are evenly coated.

    Grill the Vegetables

    Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally until they are tender and have grill marks.

Cooking Rice

    Cook the Rice

    In a saucepan, bring water to a boil. Add the rice and salt, stir, and reduce the heat to low. Cover and simmer for about 15-20 minutes until the rice is cooked and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Grilling Fish

    Grill the Fish

    Once the grill is hot, place the marinated fish fillets on the grill. Grill for about 4-5 minutes on each side, or until the fish flakes easily with a fork and is opaque.

Serving

    Plate the Dish

    On a plate, serve a portion of grilled fish alongside a scoop of rice and a helping of grilled vegetables. Garnish with extra herbs or lemon wedges if desired.
