Preparation of Calamari

Clean the Calamari
Rinse the fresh calamari under cold water. Pat dry with paper towels and slice into rings about 1/2 inch thick.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Soak in Buttermilk
Place the calamari rings into another bowl and pour the buttermilk over them. Let them soak for 30 minutes.
Frying the Calamari

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Dredge the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture, coating them evenly.

Fry the Calamari
Carefully place the coated calamari rings in the hot oil. Fry in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Mix the Sauce
In a small bowl, combine mayonnaise, ketchup, lemon juice, hot sauce, and garlic powder. Whisk until smooth.

Plate the Calamari
Serve the fried calamari on a platter hot, with the dipping sauce on the side.
