Prepare the Filling
In a large bowl, combine the shredded chicken or beef with shredded cheese and a teaspoon of salt. Mix well until combined.

Assemble the Flautas
Take a corn tortilla and place about 2-3 tablespoons of the filling in the center. Roll the tortilla tightly around the filling and secure with a toothpick if necessary. Repeat with remaining tortillas.

Fry the Flautas
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the rolled flautas, frying them in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Cook the Rice
In a medium saucepan, combine the white rice, water, and half a teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is cooked and water is absorbed.
