Flautas

Rice and Beans

Method

Flautas

  1. 1

    Prepare the Filling

In a large bowl, combine the shredded chicken or beef with shredded cheese and a teaspoon of salt. Mix well until combined.

  2. 2

    Assemble the Flautas

Take a corn tortilla and place about 2-3 tablespoons of the filling in the center. Roll the tortilla tightly around the filling and secure with a toothpick if necessary. Repeat with remaining tortillas.

  3. 3

    Fry the Flautas

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the rolled flautas, frying them in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Avocado Sauce

  1. 4

    Make the Avocado Sauce

In a blender or food processor, combine ripe avocados, lime juice, minced garlic, chopped cilantro, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Rice and Beans

  1. 5

    Cook the Rice

In a medium saucepan, combine the white rice, water, and half a teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is cooked and water is absorbed.

  2. 6

    Prepare the Beans

If using canned black beans, rinse and heat in a saucepan until warm. If using cooked beans, simply heat them up in a pot over medium heat until warm.
