Custard

Method

Caramel Preparation

  1. 1

    Make the Caramel

In a medium saucepan over medium heat, combine granulated sugar and water. Stir gently until the sugar dissolves completely.

  2. 2

    Cook the Caramel

Allow the mixture to boil without stirring until it turns a deep amber color, about 8-10 minutes. Watch carefully to avoid burning.

  3. 3

    Pour the Caramel

Quickly pour the caramel into a round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

  1. 4

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 5

    Blend the Custard Ingredients

In a blender, combine whole eggs, egg yolks, sweetened condensed milk, evaporated milk, and vanilla extract. Blend until smooth and well combined.

  3. 6

    Pour the Custard Mixture

Carefully pour the custard mixture over the hardened caramel in the baking dish.

  4. 7

    Prepare the Water Bath

Place the baking dish inside a larger roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the baking dish.

  5. 8

    Bake the Flan

Bake in the preheated oven for 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

  6. 9

    Cool and Refrigerate

Remove the flan from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
