Three soft corn tortillas covered with your choice of green, red or mole sauce melted with muenster cheese. Accompanied with sour cream, lettuce and pico de gallo. Rice and beans on the side.

Prepare the Tortillas
Lightly warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side until pliable.
Assemble the Enchiladas

Fill the Tortillas
Take a warmed tortilla and place about 1/3 cup of shredded muenster cheese in the center. Roll it up tightly and place it seam side down in a baking dish. Repeat for the remaining tortillas.

Add Sauce
Pour your choice of green, red, or mole sauce evenly over the rolled tortillas in the baking dish, ensuring they are well covered.
Bake and Serve

Bake the Enchiladas
Preheat the oven to 350°F (175°C). Place the baking dish in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

Prepare the Garnishes
While the enchiladas are baking, prepare the sour cream, shredded lettuce, and pico de gallo for serving.

Serve
Once baked, remove the enchiladas from the oven and serve hot with a dollop of sour cream, a sprinkle of shredded lettuce, and a generous scoop of pico de gallo. Serve with rice and beans on the side.
