Method
Enchiladas Preparation
- 1
Prepare the Filling
In a bowl, mix the cooked shredded chicken with half of the shredded cheese, chopped onions, and chopped cilantro. Stir well to combine.
- 2
Fill the Tortillas
Take a corn tortilla and place a generous amount of the chicken and cheese mixture in the center. Roll the tortilla tightly around the filling to form an enchilada. Repeat with remaining tortillas.
- 3
Prepare Enchilada Sauce
In a large baking dish, pour a thin layer of enchilada sauce to coat the bottom.
- 4
Assemble the Enchiladas
Place the rolled enchiladas seam side down in the baking dish. Pour the remaining enchilada sauce over the top, ensuring all enchiladas are covered. Sprinkle the remaining shredded cheese over the sauce.
- 5
Bake the Enchiladas
Cover the baking dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Side Dish Preparation
- 6
Prepare French Fries
Cook the French fries according to package instructions, either by baking or frying until golden and crispy.
- 7
Cook the Rice

- 8
Heat Refried Beans
In a small saucepan, heat the refried beans over medium heat until warmed through, stirring occasionally.
